Hello! Yes, there are many fanons in the fandom, this should be useful both for artists and the audience. People sometimes change hair colour on purpose, but sometimes just don't know it. In some cases hair colour was given only in HoME or only in linguistic magazines, so hard to check for most of people. Thus we decided there was a need for such reference. It should have happened long ago in fact.
Regarding your question - we didn't include here any Third Age characters as we focus mainly on the First Age and the Second one. Anyway Gildor being a Noldo was probably dark haired as most of Noldor. He says he is from the House of Finarfin, but it only means he was Finarfin's follower in Aman, not that he is his close kin and bears golden hair of Indis as some people read it. However it is possible he had his own Vanyarin descendants or in was Finarfin's distant kin, yet not close enough to be placed in any genealogies. We have no description of his look anyway, at least I don't remember such, so there is no correct answer. I would give him dark hair, but I don't mind him being golden haired. To me silver and red hair are out of question as rarest colours of all and a story would need to justify it (Telerin ancestors or relative to Mahtan). Yet in both of these cases JRRT would mention his hair colour, I think.
